GOLDEN FRIED PRAWNS
A wine marinade gives these crispy fried prawns a great flavor.
600 g king sized prawns, deveined
100 g flour
50 g cornstarch
150 ml water
3 g salt
2 g baking powder
750 ml oil for frying
10 ml cooking wine
2 g white pepper powder
5 g sesame oil
- Mix flour, cornstarch, water, one g salt, baking powder and 30 ml oil to a thick batter. Keep the batter aside for 30
- Shell the prawns, but retain the tails. Mix salt, wine, white pepper and sesame oil, and marinate the prawns in this mixture for 10 minutes.
- Dip prawns in the batter, deep fry in hot oil till golden and crispy.
